We take year-round care of our vineyards primarily through manual labor. We do not use any machinery on our steepest slopes. When in autumn harvest arrives, we select the grapes from each of our individual slopes exclusively by hand to achieve the highest quality wines in each degree segment.

The process requires a great deal of time and devotion. Changes in the climate also influence operations from year-to-year.

Sturdy footwear and equally steady nerves are some of the most important requirements for the year-round care of our vineyards on the Moselle River. A few of our slopes are equipped with monorail-like systems that safely transport the delicate grape harvest down to the foot of vineyard.

Our credo in the cellar is “less is more.” Therefore, we place great value on the gentle processing of our grapes, letting the fruitiness and freshness of the Moselle wines take center stage.

Caution and Patience

Using caution and being patient guide the work we do in the cellar. Careful pressing, slow and spontaneous fermentation at optimal temperatures, sufficient time to mature in both traditional 1000-liter Moselle-fud barrels and small stainless-steel tanks plus gentle one-time filtration are all key. 

These allow the special aromas and the balance of residual sugar-to-acidity to shine. Moderate alcohol levels promote the signature elegant and fresh taste and texture of our Moselle Rieslings.

Caution and Patienc

Using caution and being patient guide the work we do in the cellar. Careful pressing, slow and spontaneous fermentation at optimal temperatures, sufficient time to mature in both traditional 1000-liter Moselle-fud barrels and small stainless-steel tanks plus gentle one-time filtration are all key.
